Healthy Organic Honey Nut Bars

Give your homemade high protein nut bars a sweet boost by adding in a splash of our native Multifloral honey—it’s our unique blend of Kānuka, Mānuka, Rewa Rewa, and Pōhutukawa and is simply delightful!

Ingredients

  • 2 1/2 cups raw unsalted nuts (we like to use a mix of cashews, almonds, walnuts & peanuts)

  • 1/2 cup pumkin seeds

  • 1/2 cup sunflower seeds

  • 1/4 cup sesame seeds

  • 1/2 cup Woodland’s Organic Multifloral Honey

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon seasalt

  • 1/4 cup dark chocolate to drizzle

Method

  1. Line a slice tin (20 x 20 cm) with baking paper and set aside.

  2. Add nuts and seeds to a medium sized frypan and gently roast them over a medium heat until golden, approxiamtely 5 minutes, tossing them frequently so they don’t burn. Then set aside in a large bowl

  3.  In a medium saucepan add the honey, vanilla and sea salt and stir over a gently heat until honey has melted.

  4. Pour the honey mixture over the nut and seed mix and stir until well combined, with the honey coating all the nuts and seeds.

  5. Place the honey nut mixture into the lined slice tin and with a press down firmly until smooth.

  6. Allow to cool for half an hour then drizzle over the melted chocolate, and slice into bars.
