Festive Meringue Wreath with Organic Mānuka Honey

Our pull apart festive meringue wreath is the perfect Christmas dessert. The chewy meringues, juicy berries and sweet organic mānuka honey make it a family favourite. The meringue recipe has been passed down from Shayne’s mother, which she has lovingly taught her children and grandchildren how to make. The meringues can be made ahead of time and stored in an airtight container, ready for assembly before serving.

Serves: Approx. 50 - 60 meringues or 20-25 people

Ingredients

  • 3 egg whites at room temperature

  • 2 1/4 cups sugar

  • 6 tablespoons boiling water

  • pinch of salt

  • 2 teaspoons white vinegar

  • 1 teaspoon vanilla extract

  • 2 teaspoons baking powder

  • 2 cup whipped cream

  • 2 cup fresh seasonal berries of choice

  • 1/4 cup Woodland’s Raw Organic Mānuka honey MGO250+ for drizzle

  • Fresh mint leaves to garnish

Method

  1. Heat oven to 100°C Bake. Line a large baking sheet with baking paper, and set aside.

  2. Add egg whites, sugar and salt into a metal.

  3. Stand the bowl over a pot of hot water and boil water (don’t let the water hit the bottom of the bowl) for approximately 8 minutes. The key here is to melt the sugar but not to cook the egg whites, you do not want the mixture to turn white. When sugar is dissolved remove from heat.

  4. Add the the 6 tablespoons of boiling water (from pot) and white vinegar to the egg mix.

  5. Beat until thick and forming stiff peaks, approximately 10 minutes.

  6. Stir the baking powder well through the stiff egg mixture.

  7. Place desert spoon scoops of mixture onto baking paper.

  8. Bake for 50 minutes, then allow to cool completely in the oven to prevent cracks forming in the meringues.

  9. Store meringues in an airtight tin or glass container until ready to assemble the wreath. They will keep for up to a week in a an airtight glass or tin container, they tend to go soft if stored in a plastic container.

  10. When ready to assemble, make whipped cream (or you can use canned whipped cream).

  11. Arrange meringues in a wreath shape on a platter.

  12. Place a dollop of whipped cream on each meringue

  13. Decorate with seasonal berries, drizzle over organic mānuka honey and garnish with fresh mint leaves.
